This white blend was fermented in tinajas (amphorae), I’m currently lacking information about whether the skins were included or not – but I’m guessing they were, possibly with some stems too.
It’s tight and pleasantly reductive on the nose, with a hint of flintiness and honeysuckle. The fruit is generous, with some peach and freshly sliced pear notes. There are herbal overtones, lively acidity and a honey-tinged finish – which is nonetheless totally dry.
Overall, it’s soft-textured, approachable but full of character and quite thrilling stuff.
