This is a crisp, biscuity pet nat, almost dry on the finish, with a tiny smidge of aromatic interest from the Aleatico. It’s made with no added sulphites, and unfortunately in my bottle that was evident. The finish is dirty and mousy, and the nose doesn’t feel entirely clean either.
Frustrating, because I’m sure just a tiny pinch of SO2 would have turned this into something super tasty.
